Prawn ghee roast is a spicy Mangalorean style Prawn dish that's cooked with a special homemade ghee roast masala paste, jumbo juicy prawns and lots of ghee, The specialty of an authentic Mangalorean style Prawn ghee roast is the masala paste. Presenting Mangalore's favourite Ghee Roast in another avatar- the Prawn Ghee Roast! Succulent prawns cooked in the traditional chilli paste and prawn head stock for enhanced flavour Take a pan (preferably non-stick) and add in the cooked masala and the cleaned prawns. Add in two teaspoon of ghee and the curry leaves.

  1. Prepare 500 gm peeled and washed prawns
  2. Prepare 3 tablespoons ghee divided
  3. Take 1 teaspoon mustard seeds
  4. Make ready 1 teaspoon cumin seeds
  5. Get 1 sprig curry leaves
  6. Prepare 1/2 teaspoon fennel seeds
  7. Get 10 black pepper corns
  8. Take 6-7 dried red chilies soaked in warm water
  9. Get 1 amla size tamarind pulp soaked in water
  10. Get as per taste Salt
  11. Make ready 1/2 teaspoon red chilli powder
  12. Take 1/2 teaspoon turmeric powder

Dry roast the spices from Kashmiri chillies to garlic, cool and grind to a powder. Your 'Kundapur masala' is ready. *To make fried onion paste : Slice two onions and fry in oil on medium heat till dark brown, cool and grind to a paste with a tbsp. of yogurt. Clean, shell and devein the prawns. For the Masala Paste - Prawn ghee roast is prepared in southindia we enjoy this side dish for rasam rice, biryani, neer dosa or roti the masala paste enhances the taste in the praw.

Instructions to make Prawns Ghee Roast:
  1. Take pan roast cumin seeds, mustard seeds,  curry leaves, fennel seeds, soaked red chilies and black pepper. grind it into fine.
  2. Heat 1 tablespoon ghee in pan add prawns, salt, red chilli powder, turmeric powder and cooked till prawns done.
  3. Remove  prawns in plate. Add grinded paste and ghee in it and cook, add tamarind and cook till ghee over float on masala.
  4. Add prawns and cook till masala dry.
  5. Prawns ghee roast ready to serve.
  6. Serve this as appetizer or u can eat this with chapati also.
