Instructions to make Sev Barfi/Singar Ji Mithai:
  1. The batter for the sev should be of medium consistency.
  2. Heat oil and fry sev.
  3. Keep it aside.
  4. In a kadai, boil milk.
  5. Add sugar, mawa and sev.
  6. Add elachi powder ; rose essence, yellow mithai colour and boil till the mixture becomes thick.
  7. Go on stirring.
  8. When it is done, add ghee.
  9. Grease a steel thali with little ghee.
  10. Pour the mithai in the thali.
  11. Flatten it with the back of a steel katori.
  12. Allow it to cool.
  13. Garnish it with sliced pistas and badams.
  14. Cut it into desired shapes.
